Case Study

Kensington is the epicentre of French culture in London. Our dining concept captures the style, elegance and culinary heritage of France, and marries it with the spice and adventure of Vietnam. The bar will curate a selection of signature & house cocktails and premium beers with an exclusive French wine list.

Food: Classic French dishes sit proudly alongside inspired Vietnamese street food. Allows us to bring together a real mix of edgy authentic Asian foods with safer French dishes and a touch of subtle luxury. Desserts are based on French patisserie with Asian twists. Great opportunity for an all day dining concept bringing in a fun interpretation of a French/Vietnamese afternoon tea and café gourmand, smooth link through to the hotel breakfast.

Drink: A mix of cocktails where East meets West, interesting assortment of Vietnamese & French beers, exclusive French wine list

Positioning: Elegant with an urban, Asian spirit

Service style: Glamorous, sophisticated with an Asian edge

Cooking techniques: Grill, steamed, baked and stir fried

Menu mapping: an a la carte dining menu available lunch and dinner. The ‘starter’ section will be a selection of small plates designed to be shared by the table. This will be available all day and doubles as the ‘bar snack’ offer. Other categories will include mains, grills, sides and desserts.

Hallmarks: French elegance meets Vietnamese urban, original afternoon tea (mini bao buns, croques, banh mi, choux, matcha eclairs), fused hand-picked dishes (onglet, Vietnamese slaw), café gourmand
